Product Description

Vitamin C is a polyhydroxy compound with the chemical formula C6H8O6. The structure is similar to glucose, and the two adjacent enol hydroxyl groups at the 2nd and 3rd positions in the molecule are easily dissociated to release H+, so it has the nature of an acid, also known as L-ascorbic acid. Vitamin C has a strong reducing property and is easily oxidized to dehydrovitamin C, but the reaction is reversible, and ascorbic acid and dehydroascorbic acid have the same physiological function. However, if dehydroascorbic acid is further hydrolyzed to form diketogulonic acid, the reaction will be irreversible and the physiological efficacy will be completely lost.

 

Application

As a food additive, ascorbic acid (vitamin C) has the following main effects:

Antioxidant effect: It can prevent the oxidation and deterioration of fats, oils and other easily oxidizable components in food, thereby extending the shelf life of food. For example, it can be used in meat products to prevent rancidity caused by fat oxidation.

Color preservation effect: In the process of meat processing, ascorbic acid can be used in combination with nitrite to accelerate the formation of nitrosohemoglobin, enhance the bright red color of meat products, and make them look more appetizing.

Enhance the nutritional value of food: As a source of vitamin C, ascorbic acid can supplement the nutrients needed by the human body, especially in products such as juices, beverages, and health foods, which can help enhance immunity and improve iron absorption.

Inhibit enzymatic browning: In the process of fruit and vegetable processing, ascorbic acid can inhibit the activity of polyphenol oxidase, reduce the browning phenomenon of fruits and vegetables such as apples and potatoes after cutting, thereby maintaining the appearance and quality of food.

Chelation: It can combine with metal ions (such as iron and copper) to reduce the catalytic oxidation of these metals, thereby further delaying the oxidative deterioration of food.
