Lactic acid, scientifically known as 2-hydroxypropanoic acid, is a naturally occurring organic acid with the chemical formula C3H6O3. It is produced as a byproduct of fermentation by lactic acid bacteria or through chemical synthesis. Lactic acid is characterized by its mild acidity, high solubility in water, and diverse applications in food, pharmaceutical, and industrial sectors.
It exists in two optical isomers, L-lactic acid and D-lactic acid, with L-lactic acid being the biologically active and more commonly used form. Lactic acid is widely recognized for its role in metabolic processes, such as glycolysis, where it is formed in muscle cells during anaerobic respiration.
Its primary uses include functioning as an acidulant, preservative, pH regulator, and antimicrobial agent in food and beverages, as well as serving as a precursor for biodegradable plastics like polylactic acid (PLA).
