Product performance:
Lactic acid and citric acid are two common acidity regulators. Although they are both organic acids, they have different chemical properties, applications and performance in food processing. Lactic acid has a mild sour taste. Compared with citric acid, lactic acid has lower acidity and can provide a softer and more delicate sour taste adjustment. This makes it widely used in foods that require delicate sour taste, such as dairy products, beverages and seasonings. In addition, lactic acid has a natural source, usually produced through lactic acid bacteria fermentation, and is also commonly found in fermented foods. Therefore, lactic acid has certain advantages in some markets where consumers prefer natural and healthy ingredients.

In contrast, citric acid has a stronger sour taste and can provide significant acidity adjustment.
