E 235 grade Food Preservatives CAS 1414-45-5 Natamycin for cheese
Natamycin's primary function is as a natural mold inhibitor, effectively inhibiting the growth of mold and yeast, thereby extending the shelf life of food. It acts on fungal cell membranes, blocking their normal metabolism, but has little inhibitory effect on bacteria, thus not affecting the activity of beneficial bacteria in fermented foods. Unlike some chemical preservatives, Natamycin can achieve significant results at extremely low dosages without altering the flavor, color, or texture of food, making it particularly suitable for foods with high sensory requirements. Due to its high efficacy, naturalness, and safety, Natamycin is widely used in dairy products, prepared meats, baked goods, and condiments.
