Maltodextrin is a polysaccharide food additive made from partially hydrolyzed starch. It usually exists in the form of white powder with a slightly sweet or tasteless taste and is widely used in the food industry. Maltodextrin is favored for its solubility, good stability and multifunctional properties.
Maltodextrin can be divided into different grades according to the degree of hydrolysis (expressed as dextrin equivalent DE value). The higher the DE value, the stronger the sweetness, but the smaller the molecular weight. Its characteristics include:
