Natamycin, a natural mold inhibitor, is widely used in the food industry, particularly for foods susceptible to mold and yeast contamination. Dairy products are a key application area. For example, spraying or coating cheese and yogurt effectively prevents mold growth without affecting the activity of fermentation bacteria or the flavor of the product. In cooked and cured meats, natamycin inhibits surface mold growth, preserving product appearance and shelf life. It also provides effective protection in high-risk foods such as baked goods, dried fruits, nuts, and condiments.
